We were first introduced to Viola back in 2009 is has been a staple in our inventory ever since. Having Colleruita, Il Sincero and Inprivio available on Crossroads Food and Wine site is a treat. Marco Viola is the consummate farmer and blender of his estate grown olive oils. Colleruita and Il Sincero are staples in his line but each year you will find him reaching for something different in the flavor profiles of his proprietary blends and mono-varietals. The search for traditional natural flavours to preserve the bond with the past: the result is a light extra virgin olive oil with a great aroma and a unique scent.

Light fruity oil, excellent on raw and steamed fish, shellfish salad; perfect on polenta with roast codfish, barbecued tuna with red onions and basil or with boiled veal and potato puree. It can be used to make mayonnaise or legume cream. It enhances the taste of olive oil yogurt cakes and it pairs remarkably well with anisette and star anise cakes.
