Marco Viola is the consummate farmer and blender of his estate grown olive oils. Colleruita and Il Sincero are staples in his line but each year you will find him reaching for something different in the flavor profiles of his proprietary blends. A blend of Moraiolo, Frantoio and Leccino varieties from the hills of Roviglieto and Scandolaro are used for COLLERUITA-DOP Umbria Extra Virgin Olive Oil – Colli Assisi Spoleto Small-sized and low yielding plants whose life is closely related to the life of the people who take care of them and pick their fruit in a land of earth and stone. Only a careful selection of the fruits allows us to obtain this intense aromatic note of green olive; the balance between bitter and pungent flavour distinguishes this typical Umbrian extra virgin olive oil.
With an intriguing aroma, it is ideal with lentil or vegetable soups, tuna and swordfish carpaccio; it enhances the taste of beef tagliata and barbecued lamb chops, penny bun salads and vegetables au gratin. It can be used to prepare olive oil ice cream to serve with berries sauce.
