“One of my favorite producers!  Delicious chocolate in a 100 gram bar which is a generous portion.  Pralus is a master and I suggest purchasing a Francoise Pralus Mini-Pyramid which has 10 or so small single origin chocolate tablets  from around the world.  Share it with some on you like and get a fantastic perspective of how terrrior and varietal influences the flavor of chocolate.”   Uncle Jerry

Description

The name Pralus was first associated with chocolate in 1948 when Auguste Pralus began his first patisserie in France. Francois Pralus furthered the tradition by creating his own single-origin bars from the world’s finest beans in 1991. As with many French chocolatiers, the cacao beans are roasted much longer than their European and American counterparts. The result is a darker colored bar with smokier, darker flavors. Explore the dark, roasty, iconic flavors of Francois Pralus chocolates.

Francois Pralus is an exceptional Master Chocolate Maker because he is one of the few in France to manufacture his own chocolate. François Pralus works with dried cocoa beans that he receives from the very best cocoa plantations all over the world, especially from South American and Indonesia.  From these exceptional beans he produces around fifteen pure varieties and 4 blends.

“I do everything myself says François Pralus, rather than buying from specialized suppliers.”  And he has gone even further since he now has his own cocoa bean plantation in Madagascar.
