Bean to Bar or craft chocolate from chocolate makers are actually quite particular about the cacao beans they source. They are looking for extra ordinary quality from origins whose history trace back for centuries. Some go so far as to source wild cacao that is as it was when the Mayans used it for money and as an elixir reserved for royalty. Start to finish the goal of their efforts is to translate the each origin’s special flavor characteristics. I think the process has a greater diversity of choices than say wine making.
